Pairings/Experiences Description: Your wine country sensory tour takes place in our Kenwood Tasting Room Herb Garden, hosted by a member of our culinary specialist team. The tasting includes a flight of 4 Paradise Ridge wines. The experience will leave you with an understanding of how to create your own culinary pairings with wine, family, and friends upon your return home.

This sensory experience was created to showcase the chemistry of the wines and their relationship with herbs and thus cuisine, and will encourage you to trust your palate when pairing wine and food. The garden has been divided into 4 areas and wine can also be broken down into similar groups:

Bitter – High acid, no to low sugar
Bright – High acid, low sugar
Savory – moderate acid, moderate sugar
Sweet – Low acid, high Sugar
This sensory tour highlights the use of our 5 senses. (Fifth sense is included in Premier Experience only.)

1 – Vision — Using your eyes to taste the wine without smelling the product. Encouraging the taster to describe wine based on vision. Example – clear, bright, dark, color — at this point you are resisting the urge to smell.
2 – Smell — Smell is a human reaction. We seldom consume anything without smelling. Due to all the complexities of the wines based on Brix, TA, Acid, pH, & barrel program, the wine can create some extremely unique aromas.
3 – Taste & Feel – So now the fun starts…. We ask guests to focus on 3 tastes and mouth feel. Front pallet, mid pallet, and finish extension. The reason for 3 tastes is because of the complex chemistry in premium wines allowing the brain & pallet to come together. We then taste a bitter with the wine, sorrel; and then sugar with the wine, Stevia. Now that guests understand acid & sugar in plant form, we use our nose the rest of the way! Breaking down the tasting to this level allows tasters to not only understand how to best pair our wines with their favorite recipe, it also offers education into the chemistry relationship between the food, wine, and the consumer, showcasing the role each presents. Guests discover how their pH plays a role in how they interpret the chemistry of wines. Some will taste more fruit and some greater acidity, and this is the way of the world!
4- Off to the Garden to explore Sugar and Acid in plant form following our nose to perfection!

Concluding the Herb & Wine education experience, indulge in sense-ational experience. This passionate collaboration features decadent Wine County Chocolates infused with herbs from the garden paired with five luxurious handcrafted Paradise Ridge wines. Wine and Chocolate lovers will relish this one-of-a-kind tasting showcasing herbaceous flavors.
