Butcher & Cook Going from Pop-up to Permanent
Here’s something to cluck about. Butcher & Cook got its start as a pop-up in downtown Santa Rosa last fall, focusing exclusively on Sunday fried chicken dinners. But now, talented butcher Berry Salinas is opening a solid-foundation, all-the-time “comfort shack” about a mile southeast of where her dream began.
Back in November, Salinas brainstormed with Sonoma County restaurateur Don Taylor about where she could offer weekly organic poultry dinners, as good food for a good cause. Her idea was that for every supper sold, local non-profits would collect $5.
Taylor happily offered up his Omelette Express space near Railroad Square, and a bird was born.
By May, Butcher & Cook plans to be open for business in a former Greyhound bus stop-off building in Santa Rosa’s South A neighborhood. And while there will be chicken, including chicken and waffles, there will also be dishes like fish ‘n’ chips, biscuits and barbecue.
For anyone wanting to help the Cook come together faster, by the way, Salinas has set up an Indiegogo account to collect funding. Primarily, she needs to pay for an unexpectedly expensive exhaust hood fabrication and instillation.
