New Bird and Bottle Restaurant in Santa Rosa
Restaurateurs and husband-and-wife team Mark and Terri Stark have built quite a dining empire in Sonoma County, with a collection of eateries in concepts ranging from steak, to seafood, to tapas and wine bar.
Now, you can add southern-style Jewish American Asian to the mix, too. Or, as executive chef Mark Stark calls it, “a modern tavern celebrating the melting pot that is American cuisine.” With the debut of Bird & Bottle in Santa Rosa, there are now six Stark restaurants, and this one may be the most unique to date.
Consider Willi’s Wine Bar, Monti’s Rotisserie, and Stark’s Steak & Seafood in Santa Rosa, plus Willi’s Seafood and Bravas Bar de Tapas in Healdsburg. The latest, Bravas showed us that chef Stark has a wild side, with dishes like roasted red beets with cinnamon, walnuts and Idiazábal Basque cheese; or crispy pig ears in anchovy vinaigrette.
Yet at Bird and Bottle, on Fourth Street between Brookwood and College avenues, there are wood grilled fresh gulf prawns served with Southern Saltines and Korean chile butter; crispy chicken skin cracklings with in Nashville hot sauce; and matzoh ball soup with bbq chicken thigh and ramen dashi.
The format is small plates and cocktails, with a handful of larger plates made mainly on the wood-burning grill. Chef de cuisine Eric Foster – brought over from Willi's Seafood & Raw Bar – also sends out crispy crawfish dumplings, wood grilled whole fish withpinenut gremolata, vinegar dipping sauce, house kimchee, bean sprout slaw and sesame biscuits; and applewood smoked duck with the crispy skin on the side, maple and nuoc mam fish sauce.
Creativity – it’s the hallmark of delicious Sonoma County dining, and Stark is setting new standards.
