New Chefs for Flipside in Rohnert Park and Santa Rosa
As restaurateur Nino Rabbaa continues to expand his Sonoma County restaurant empire, he naturally requires more and more kitchen talent.
So welcome to the fold: chef Patrick Schaeffer at Rabbaa’s new Flipside Brewhouse, slated to open by the end of the year in Rohnert Park, and Jason Eksterowicz to Flipside Bar & Burger in downtown Santa Rosa.
Coincidentally, both chefs come from Las Vegas. Schaeffer was in culinary operations management for the MGM Grand in Las Vegas, while Eksterowicz worked at the Las Vegas Hilton and the MGM Grand.
Schaeffer’s assignment is to create a Brazilian steakhouse and a beer garden in the former Latitude Restaurant on Roberts Lake Drive. Done so far: The creation of six original recipe Flipside drafts, plus the design for the 14,000-square-foot lake-front restaurant featuring a patio with fire pits, a sports bar, and live music.
Eksterowicz, meanwhile, is revamping the existing Flipside’s gourmet burger menu to showcase more local products and artisanal ingredients. He’s also branching out to woo a clientele that eschews beef. Witness the new vegetarian burger of crispy roasted Portobello topped with boursin, pepper jack, and Sriracha mayo.
