Ovello Salumeria Debuts in Downtown Sonoma
It’s salumi, as far as the eye can see, at the new Ovello Salumeria in Sonoma County. Located on West Napa Street near Third Street West, it's all thanks to owners Doreen and Andrea Marino. Their dedication to Italian and Spanish meats had then traveling to Europe, remodeling the former bakery space to include a climate-controlled salumi fermenting room and a salumi aging room, plus a gleaming red Van Berkel International slicer from Milano.
Andrea hails from the Piemonte and Torino regions of Italy, and he learned the art of meat curing in home kitchens there. The line-up includes European meats as well as localized meats crafted with Sonoma and Napa county wines. There’s also duck breast prosciutto crafted with Penngrove’s Liberty Farms duck breast.
He also seems to have conquered other culinary arts, as Ovello also offers marinated Mary’s rotisserie chicken, focaccia, pizzetti, herbed breadsticks and crackers, flourless chocolate fig cakes, panna cotta, chocolate hazelnut cookies.
And why not: Andrea began his career in Europe working in more than 20 restaurants before opening his own restaurant in Barbaresco, Italy, where he earned a Michelin star for 10 of the 15 years he was in business. After he moved to Sonoma, he worked as a private chef and ran his Aromi catering business.
The grocery section is ample, as well, including local and imported cheeses, truffle oil, patés, European sodas, tinned Italian and Portuguese sardines and tuna, jarred gourmet vegetables, pasta sauces, biscotti, and preserves.
