    Come to the Seamus Wines Tasting Lounge, where you will meet our friends from Sushimotos.  Led by Chef Edward Metcalfe, the former chef & owner of Sonoma’s Shiso Japanese Restaurant, our Sushi & Poke Party menu features favorite dishes & highlights from Chef’s time at Shiso.   Chef brings the best of the renowned Shiso, named 2006’s best new restaurant in Sonoma, as well as the delectable dishes that earned numerous accolades from Michelin during Chef’s 12-year tenure in Sonoma Valley.

    When you go out for sushi, does the chef make you feel intimidated or so uncomfortable that you don’t ask all of your burning questions?   Have you ever been curious, and wanted to know what was happening at the sushi bar?  We will share the secrets!  Our goal is to educate and teach all the misnomers of sushi.

    Chef Edward Metcalfe is excited to share his 35 years of experience, eager to impart the knowledge he’s gained throughout the years.   Passing along the step-by-step process, and his tips, our Chefs-in-Training will learn everything they need to know in order to make quality sushi at home -- in just under 2 hours.
    In our 90 minute class, we will teach you the techniques of different styles of rolls, demonstrating step-by-step how to create unique sushi with fresh high quality tuna, salmon, Hamachi and other species of fish.  Each bite will be paired with the perfect wine from Seamus to complement the flavors of each creation.  Chef will share his expert knowledge of different types of Tuna species and why Blue-fin, Big-eye and yellowfin tuna is distinctively different from all other fish on the market.

    All participants receive a list of ingredients and recipe card, with details instructions so you may continue practicing at home. There will be plenty of time to ask as many questions about recipes and the wines you’ve sampled along the way.  Seamus Wines Tasting Lounge winemake & proprietor, James Foley, will be on hand to pour for your group of 4-10 during the Sushi & Poke Party.  During, and after class, you will have time for one-on-one interaction with our winemaker!  He’ll be able to give you insight into the winemaking process, the different flavors and help you select the best pairings for your at-home creations.  

    $125 adults, $50 children; Class/Group Minimum 3-4 participants (30 max); 48-hour advance booking required.
