Glen Ellen welcomes Les Pascals French patisserie
Pascal Merle and his wife Pascale bring a deep love for the art of pastry making and a comprehensive understanding of the science behind it to Les Pascals, their new authentic French patisserie in the Wine Country hamlet of Glen Ellen, in eastern Sonoma County.
Working with partner and Boulanger (bread maker) Sean Perry, chef Pascal creates authentic, unique, and delicious pastries — Napoleons, assorted chocolate desserts, fruit tarts, éclairs, seasonal desserts, flans, croissants, brioches, turnovers, and other delicious treats. The menu also includes French-style baguette sandwiches, seasonal soups, cold fruit, and various quiches.
Chef Pascal has worked as a pastry chef at leading French patisseries for almost four decades; from 2013 until recently he and his wife were co-owners of Lafayette Bakery in Carmel, California. Bread maker Perry was original hired as an apprentice at Lafayette Bakery, but eventually managed all of the dough. When Pascal and Pascale moved to Glen Ellen and asked Perry to be a partner in Les Pascals, he quickly agreed.
