Working with fresh, seasonal ingredients, the chefs create sushi, small plates like Sunomono salad (cucumber, shrimp, octopus, seaweed, and rice vinegar) or Gyoza Dumplings (chicken and ground pork, fried or steamed), and big, beautiful bowls of ramen.
