Bob Cabral Winemaker Dinner with Chef Dustin Valette

Our evening begins with a Charcuterie Opener, followed by a three-course Winemaker Dinner — an unforgettable experience of exquisite wines and culinary artistry. Seating is limited to maintain an intimate atmosphere, so we encourage you to reserve your spot promptly. Bob Cabral is a fourth-generation grape grower and acclaimed winemaker with over 45 years of experience, including 17 years at Williams Selyem Winery, where he crafted North America's first 100-point Pinot Noir. In 2015, he launched Bob Cabral Wines to focus on his own small-lot, expressive wines.

Chef Dustin Valette, a Sonoma County native, honed his craft in esteemed kitchens such as the Michelin-starred Aqua in San Francisco and Bouchon in Napa Valley. In 2015, he co-founded Valette in Healdsburg, followed by The Matheson in 2021 — both celebrated for their dedication to local ingredients and exceptional dining experiences.

Executive Chef Nate Davis brings a wealth of experience and a passion for innovative cuisine to The Matheson. His collaboration with Chef Valette ensures a harmonious blend of flavors that perfectly complement the evening’s wine selections.
