Four-Course Dinner with L’Etoile

Hamel presents a special dinner at the winery estate in Sonoma featuring a four-course menu from Chef Tory Miller of LEtoile Restaurant in Madison, Wisconsin, and Hamel Executive Chef Thomas Mendel. Join us for an evening of fine dining and specially selected Hamel wines under the stars.
Chef Tory received a James Beard Foundation Award for Best Chef: Midwest in 2012 and continues to earn high praise both locally and nationally for LEtoiles excellence in food, wine, and service. Notable recognitions include Gourmet magazines Americas Top 50 Restaurants and Saveurs Top 100. At LEtoile, they believe in supporting local farms and artisan producers, encouraging young farmers to explore heirloom varieties and heritage breed animals.
Founded in 2014, Hamel is a family-owned winery that produces estate-grown wines from certified biodynamic and organic vineyards on the western hillsides of the Mayacamas Mountains in the Moon Mountain District and Sonoma Valley.
The first course consists of cantaloupe gazpacho, dungeness crab, salsa macha verde, and 2024 Nuns Canyon Sauvignon Blanc. This served along with garlic milk bread, kemongrass, and Thai basil butter.
The second course includes vermilion rockfish, ratatouille, sauce Provençal, and 2023 Nuns Canyon Grenache.
Your third course is California wagyu bulgogi, heirloom tomatoes, basil, Bluemont Dairy bandaged cheddar, and fig ssamjang. Paired wines include 2019 Isthmus Red Blend, 2018 Nuns Canyon Cabernet Sauvignon, and 2019 Pamelita Reserve.
Enjoy a delicious dessert of bittersweet chocolate crémeux, California stone fruits, and lemon verbena crème anglaise.
