Chef Gerard Nebesky’s culinary journey began at age 23, when a plan to open a graphic design business unexpectedly turned into the opening of the beloved Bohemian Cafe in Occidental. Years later, after discovering traditional Spanish paella on a ski trip in Spain, Gerard became inspired to master the dish. That passion led to the launch of Gerard’s Paella — a traveling culinary experience bringing the iconic flavors of Spain to communities across California.
