TASTE OF TUESDAYS
Elevate your spa day with Taste of Tuesdays; a series of epicurean-style events highlighting some of our favorite local vintners and winemakers.
Attendance is complimentary for guests of Fairmont Sonoma, Sonoma Golf Club, and Members of Club 1927. Guests who purchase a day pass to Fairmont Spa will receive access to the experience on the day of their visit.

5th | Extradimensional Wine Co, Yeah! Extradimensional Wine Co. Yeah! is owned and operated by husband and wife team, Hardy Wallace and Kate Graham. Hardy, previously of Dirty and Rowdy Family Winery, developed a wild following redefining California wine. Hardy is known for his deep dive into California Mourvèdre and for championing lesser-known grape varieties that speak to the soul and stand with the worlds greatest wines. He is a believer in wine as a vehicle for transformation.
12th | Bedrock Wine Co. The winery is first and foremost a mission-driven operation dedicated to preserving and rehabilitating old vineyards around California. These vineyards, planted by Californias viticulture pioneers in the late 19th and early 20th centuries, are living pieces of history. Not only are we able to draw inspiration from those very pioneers, but we get to actually use the materials they planted, which have survived two world wars, Prohibition and a constantly changing marketplace. If something has been growing for over 100 years it not only deserves the respect of us humans, but it probably makes some darn good wine too.
26th | brick & mortar brick & mortar creates vibrant, age-worthy wines, site-driven and unique, with a focus on sparkling. Our wines are deeply rooted in California, but driven by French traditions. Matt and Alexis Iaconis founded brick & mortar in 2011 and co-run the winery. Our journey into winemaking has been driven by our shared love of drinking vintage champagne and white Burgundy. Early in our dating years we spent every third Monday of December with a dear friend who hosted Champagne Holiday, sharing vintage Krug, Salon, and Cristal, memorably opening a 2000 Clos du Mesnil to celebrate our engagement. Discovering Krug Collection, Dom Oenotheque, Roulot and Coche Dury while working together at Michelin three star The Restaurant at Meadowood guided us to produce Chardonnay, Pinot Noir and sparkling wine from exceptional sites in Northern California. We love to taste Coche Dury, Comte Lafon, Jobard and Krug, their style and tradition as a framework for what we produce.
